A Few Words About Pierre Dukan
The French nutritionist who developed this healthy slimming diet has worked in the field for 30 years. Besides studying about nutrition, he has also focused on food behaviour and healthy eating.

The Dukan diet has been conceived after rigorous research and practice. Due to its universality, the diet has gained recognition in over 23 countries, including the United States, Russia and Korea.

The Basic Principles
Nutrition consists in three elements: carbohydrates, fats and proteins.
• Carbohydrates
They provide the necessary energy for our body’s to properly function; about 50% of the daily energy requirements. They are present in foods like fruits, honey, cereals, bread, pasta, rice, lentils, and vegetables. Bananas, grapes and cherries are the richest fruits in carbohydrates; so is wine and alcohol in general.

Our body assimilates carbohydrates quickly and easily. Moreover, they facilitate the production of insulin which favours the production and development of fats.

The Dukan healthy slimming diet excludes carbohydrates entirely in the attack phase. In the cruise phase, you eat vegetables because they do not contain much sugar.

• Fats
Fats are the enemies of losing weight and not good for your health, although a tiny amount is necessary. Too much fat leads to the growth of cholesterol and triglycerides levels, which is dangerous for your health. Fats come from two sources: animal and vegetable fats.

Animal fats are found in pig, lamb, goose and duck meat. Beef has lower levels of fat except ribs and steak. In the case of fish, sardines, tuna, salmon, mackerel and herring also have a high level of fat. However, fat from fish is healthier because it contains Omega 3 which fights fat build-up. Butter and cream is a form of pure fat.

Vegetable fats are different types of oil. Even if the sunflower, olive and canola oil is recommended for cardiovascular heath, they are not allowed in the healthy slimming diet because they have a high caloric value. Nuts, walnuts, pistachio, and similar should also be avoided.

• Proteins
They are vital for our survival. The richest food in proteins is meat, fish, crustaceans and eggs. If our body does not consume enough protein, it will try to obtain them from the body’s reserves: mainly from the muscles, skin and bones. They are also harder to disintegrate and assimilate. This is why they enhance the feeling of satiety and you feel full faster and for longer.
The idea of the Dukan diet is that, by consuming only proteins, the calorie absorption will decrease. Moreover, this healthy slimming diet allows you to consume as much as you like from the recommended food groups. Eating less or a limited amount of calories is not among the principles.
